Been involved with quite a number of animal sacrifices this week and coincidentally, today is World Vegetarian Day! (http://en.wikipedia.org/wiki/World_Vegetarian_Day) So it's time to redeem myself!
On my way home, I popped by the organic grocery store and got a nice pumpkin quarter. I chopped it into chunks and grilled it with some oregano and mint from our little pot of herb jungle...sizzled in some Portobellos from the shed, with leeks, onions and sage...added a splash of wine....stirred in the sugar snap peas for some crunch, threw in a handful of chopped parsley, seasoned to taste....arranged a bundle of wholemeal spaghetti on a warm plate, piled the grilled pumpkin chunks, mushrooms and snap peas on top....drizzled a touch of extra virgin olive oil, grated some parmigiano.....for the last touch, a sprig of purple sage flower from Frank...aw.....there we have it, a quick and simple mid-week dinner, with no animals involved! Haha....Happy World Vegetarian Day! :D
